Zucchini filled with Chicken & Bacon!



You NEED to try this atleast once in your life. Although I would recommend making this once per month, showing off to your friends. :) 
This recipe includes 3 of my favorite ingredients: chicken, bacon and zucchini!

If this isn't yum, I don't know what is!

Preparation time: 15 minutes

Cooking time: 15 minutes

Total time: 30 minutes

This recipe is good for: 3 servings

Ingredients

  • 3 large zucchini
  • 600g thin sliced chicken
  • 18 slices bacon
  • 2 teaspoons sea salt
  • 2 teaspoons black pepper
  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chili powder
  • 18 toothpicks

Instructions

  1. Heat the oven to 200 Cº. Line a baking tray with paper towels and put it aside for now.
  2. Wash the zucchini's and cut each one in half lengthwise. With the help of a spoon, scrape out all the seeds and soft (stuff? Don't know the correct word for it haha) do this for each half zucchini.
  3. Mix the chopped chicken with salt, pepper, cumin, garlic powder, onion powder, and chili powder.
  4. Put the chicken in the center of each half zucchini. Wrap 3 bacon strips around each zucchini half and secure all 3 of the slices with a toothpick,
  5. Place each zucchini on the baking tray we made in step 1 and bake for about 15-20 minutes, checking after about 13 minutes to be sure that the bacon not fire :) What a dangerous recipe!
  6. Remove from the oven and let it cool for 5 minutes.
  7. Serve and impress everyone.


Tips:
Include 5 bacon strips on each half zucchini instead of 3 :)
Mix up the filling (In this case the chicken) with other ingredients!

Scrambled eggs with smoked salmon

Mustard fits really well with the super salty salmon and creamy avocado in this delicious and healthy breakfast recipe. You HAVE to try this! :)

Ingredients

  • 4 eggs
  • 4 tbsp coconut milk
  • 1 tsp mustard
  • 1 tomato, diced
  • 1 tbsp coconut oil
  • Celtic sea salt and freshly ground pepper, to taste 150g smoked salmon, chopped
  • 1 avocado, sliced
  • Handful chopped fresh chives

Instructions
  1. Mix the eggs with the coconut milk and mustard, afterwards mix the tomato. Spice it up with some salt and pepper.
  2. Melt the coconut oil in a frying pan and pour the egg mixture into the pan.
  3. Stir slowly with a wooden spoon (Go with the spoon from the outside of the pan to the inside while stirring) until the egg is cooked.
  4. Serve with avocado and smoked salmon and garnish with fresh chives.

Apple Chips

Chips! from apple with cinnamon



Surprise the kids with this healthy snack instead of the "normal" sugar-stuffed sweets.
To be honest, keep it all for yourself because it tastes so good!

This recipe only requires 2 ingredients, so it's easily available for any beginning Paleo cook!
Great as a first paleo cooking. Maybe involve your children in the process of cooking this! :)

Good for around 2 persons

Ingredients:
  • 2 apples
  • 1 tsp cinnamon

That's it? YES! That's it!


Instructions:

  1. Preheat the oven to 100 degrees Celcius and including a bit of baking paper
  2. Cut the apples with a sharp knife into thin slices.
  3. Remove the seeds and arrange the apple slices on the baking sheet (without having the slices overlap).
  4. Sprinkle the apple slices with cinnamon.
  5. Bake for 60 minutes and then flip the slices over and then bake it again for 60-120 minutes while you flip over the slices every now and then.
  6. The apple chips is ready when they are completely dry.
  7. Note: Store this in an airtight storage so they stay fresh!
  8. Enjoy!

Paleo pepperoni meatza (Paleo's Pizza)

I recently stumbled upon this recipe, I tried it once. It's pretty good I have to say!


Paleo Pepperoni Meatza


For those who don't know, Meatza is basically a pizza in the Paleo world!
Made out of meat, (Hence the name Meatza ;) )

We will spice the meat up with some pepperoni. Last but not least we will add some peppers and olives.
Enjoy!

Preparation: 30 minutes

Cooking time: 30 minutes

Total: 60 minutes

Good for around 2 persons!

Ingredients:

  • 500g grass-fed beef
  • 3 cloves garlic, crushed
  • ½ tsp fennel seeds
  • 1 tsp mustard seeds
  • 1 tsp chilli flakes
  • 1 tsp allspice
  • ½ tsp cayenne pepper
  • 1 tsp mild chilli pepper powder (or regular pepper)
  • 1 teaspoon sea salt
  • 1 tbsp oil cooks
  • 1 red onion, sliced into rings
  • 3 vine tomatoes, diced
  • 1 can tomato paste
  • 1 tsp red wine vinegar
  • 60 ml water
  • 1 tsp thyme
  • 1 tsp rosemary
  • ½ green pepper, cut into strips
  • ½ red pepper, cut into strips
  • handful black olives
  • 1 tsp oregano

Instructions -
  1. Preheat the oven (with baking paper) to 200ºC.
  2. Take a bowl and mix the meat with the garlic, fennel, mustard, chili flakes, allspice, cayenne, paprika and salt.
  3. Shape the meat into a ball and press it on the baking sheet into a round disc of about the size which suits you. Do not make it too thick, or too thin! (Check the photo for reference)
  4. Bake the pepperoni "pizza crust" in about 15 minutes in the oven.
  5. Then leave them to cool slightly and pour any released fat.
  6. Whilst crust is baking, start preparing the tomato sauce.
  7. Melt above the coconut oil in a pan and fry the red onion until translucent.
  8. Add the diced tomatoes, tomato paste, vinegar, water, thyme and rosemary and simmer without a lid on the pan simmer until you have a thick sauce (about 10 minutes).
  9. Spread the tomato sauce over the meatza, sprinkle with oregano and top with the peppers and olives.
  10. Bake the meatza again 10-15 minutes in the oven until the edges begin to brown and peppers are soft.
  11. Remove from oven and serve.

My first recipe! (Paleo Tzatziki)

This is my very very first post on my blog.
I am so excited!! :)
Let's make it a good start of a great blog, so i'll start with my very own Paleo recipe!

Feel free to discuss below about anything you might want to see on here! I am doing this for you all!


Now we cleared that up, let's start!

Paleo Tzatziki!


I am sure you all have heard of the greek sauce, Tzatziki. I never found it spicy or sharp as they may call it. But I always liked it, that's for sure!
This is not normal Tzatziki as you might've noticed, this is a special Paleo version, Tzatziki and avocado!

Preparation: 20~ minutes.

Total time: 20-25 minutes.

Amount good for atleast 3 persons.

Ingredients:
  1. 1 Advocado, cut in small pieces.
  2. 100 ml almond milk
  3. 2 cloves of garlic
  4. 2 table spoons of lemon juice
  5. 4 leaves of mint
  6. 1/2 teaspoon of dill
  7. 1/2 cucumber

Let's go!
  1. Take a bowl and puree the advocado with almond milk.
  2. Stir the cloves of garlic, lemon juice, the mint and dill through the mix of advocado and almond milk.
  3. Cut the cucumber longwise and scrape all the seeds out of it, you can do this with a teaspoon.
  4. Grate the cucumber and mix it in with the other ingredients you mixed in step 1 and 2.
  5. Done! Although it's good to leave the sauce for a day, so all the ingredients and it's flavours can really mix in with the sauce.
Tips!
You can perfectly use this sauce with burgers, even tunaburgers if you want to.
Many, many combinations possible. Experiment!
